Shrimp Salad Supreme 

 

Of all my low-calorie meals, this is my personal favorite. Nothing about this salad says “diet.” 

 

4 large shrimp, cooked 

1/2 cup celery, chopped 

1/2 medium apple, cored and chopped 

1 tsp low-calorie mayonnaise 

1 tsp Dijon mustard 

2 cups lettuce 

 

Mix all ingredients except lettuce. Arrange lettuce on a plate and top with salad mixture. For variation, add 1/2 cup steamed green beans.
