Nikki’s Cool as a Cucumber Salad 

 

Easy to make, this salad lasts for at least a week and tastes great. 

 

1 cup white vinegar 

1/2 cup water 

2 packets of sugar substitute 

2 medium cucumbers, peeled and sliced 

1 onion, chopped

Fresh dill, chopped 

Season to taste with pepper 

 

Combine white vinegar, water, and sugar substitute. Add remaining ingredients. 

Put in refrigerator to marinate. For a change of pace, add 1 cup of lettuce. 

 

Makes 4 cups
